As access to winemaking facilities and equipment for wine analysis becomes increasingly expensive and difficult for young winemakers, an idea was formed by the family behind Stones of the Yarra Valley and Meletos to provide a facility for new winemakers to produce small batch wine in a professional and supportive environment. Under the expert guidance of winemakers Damian North (Journey Wines) and Behn Payten (Payten & Jones, Four Pillars Gin) the No.7 Healesville Young Winemakers Program is the first of its kind in Australia.
No.7 Healesville’s Tapas Bar accepts reservations for any group sized bookings and encourages walk-ins.
All reservations of 8+ will be served our ‘Feed Us’ menu. This shared tapas banquet features a selection of our most loved tapas dishes for your group to share.

We’re thrilled to announce a series of wine dinners down here at No.7 to take place monthly, having recently hosted the inaugural dinner with legends (and neighbours!) Payten & Jones, we are thrilled to announce Wine Dinner #2 with none-other than Damian North of Journey Wines!
From the lauded floors of iconic Sydney restaurants (Tetsuya’s of Rozelle and Pier at Rose Bay) to the green pastures of Oregon, USA, Damian North’s career in wine has been full tilt from day one. Having begun his career as a sommelier in Sydney, Damian soon realised his passion for wine extended beyond curation, and into creation. Damian studied winemaking at Charles Sturt University before moving to the Yarra Valley where he spent a number of years as assistant winemaker at TarraWarra Estate. His love for Pinot Noir lured him to the evergreen slopes of Oregon, where he set-up home with his wife and two children for three years making nothing but pinot noir at the renowned Benton-Lane Winery. After a remarkable few years in America, the allure of Chardonnay carried him to internationally renowned winery Leeuwin Estate in Margaret River, WA. Five years making wine at Leeuwin Estate took Damian’s wine making to a whole new level.
Having always dreamt of starting his own label, Damian returned to the Yarra Valley where he launched Journey Wines, sourcing exceptional fruit from vineyards throughout the Yarra Valley and Heathcote. Not only does Damian run Journey Wines, but he is also the mentor down here at No.7 for our Young Winemakers Program: guiding, teaching, overseeing and generally sharing his expertise and experience with our Young Winemakers! Outside of No.7, Damian has quickly established Journey Wines as a highly respected and sought after wine label, and we are delighted to host Damian at No.7 for Wine Dinner numero 2!

Here at No.7 we are excited to present the launch of our monthly wine dinner series. Once a month we will be teaming up with one of the many talented Yarra Valley winemakers to host a dinner celebrating some of our regions best wines.

Coming up this Friday, singer-songwriter sensation Amy Powell takes to the stage for a night of amazing tunes!
A remarkably talented musician and singer, Amy is the perfect combination of Joni Mitchell and Sarah Blasko. Beautiful, harrowing, uplifting and powerful songwriting that is sure to leave us all spellbound!

Young Winemakers Program
As access to winemaking facilities and equipment for wine analysis becomes increasingly difficult for young winemakers, an idea was formed by the family behind Stones of the Yarra Valley and Meletos to provide a facility for new winemakers to produce small batch wine in a professional and supportive environment.
Encompassing an urban winery, tapas bar and events space, No.7 Healesville is dedicated to fostering the next generation of Australian winemakers by providing expert advice, mentoring and state-of-the-art equipment.
Each year, No.7 Healesville will select up to 20 young winemakers who will each press 2-tonnes of fruit to produce what will be the very first wines of their professional careers. With access to mentoring from winemakers Damian North (Journey Wines) and Behn Payten (Payten & Jones, Four Pillars) the program provides valuable support in all aspects of winemaking, from the sampling of juice right through to business advice on establishing a new wine label.
No.7 Healesville features world-class equipment including a Scharfenberger de-stemmer and press and has the capacity to facilitate all aspects of the winemaking process on site - from the day the fruit arrives, to the moment the wine is labelled.
An important element of the program is the acquisition of wine. Assuming the winemaker meets all the criteria of the program, No.7 Healesville will commit to buy half the finished product from the winemaker to sell through it’s tapas bar or via restaurant and events held at Stones of the Yarra Valley & Meletos. This commitment will ensure that the costs involved in the press, storage and bottling process will ultimately be absorbed by No.7 Healesville. Additionally, No.7 Healesville will aggressively promote each winemaker and their brand to ensure an extraordinary start to their winemaking career.

Coterie Vintage Membership
The 2019 Coterie Vintage Membership is officially underway, following a remarkable site visit to Tibooburra and an afternoon of stomping. As a result bookings are closed for 2019, however if you’d like to learn more about the program or register your interest for 2020 read on.
The Coterie Vintage Membership is an innovative and interactive membership that fuses food, wine, new friends and good times over a series of unique sessions.
No winemaking experience necessary - just a love for wine and making friends!
The winery is full of new toys for our winemakers to play and excitement levels are high! We’re in full swing with winemakers Behn Payten and Damian North taking on another vintage head on! Chardonnay, Pinot, Sauvignon Blanc and Shiraz grapes have been pouring through the doors for the last two weeks as we wrap our heads around the remarkable gear we have at our fingertips!
The selected variety for our first Coterie Vintage Membership is a Shiraz from a magnificent vineyard in the Upper Yarra Valley called Tibooburra. This property provides a variety of farming pursuits – as well as a number of grape varieties, Tibooburra also runs a substantial herd of Angus cattle and more recently truffles were discovered on the property! Greg and Susan Kerr are certainly living the dream and managing a property with a complete commitment to sustainability and environment. We are so pleased to be working with them on our first Coterie wine project.
Damian North from Journey Wines is running this year’s Coterie Vintage Membership program, which based off our first session we have no doubt is going to be a very fun year! Mid-year barrel tasting, wine info sessions, bottling and the Uncorked Dinner - good times ahead!

Meet the Team
Throughout the course of history certain stars have aligned which leave us in awe of the Universe’ power and plan:
Scottie Pippen and Michael Jordan both deciding Chicago is where they’d like to play basketball, Black Sabbath and Led Zeppelin emerging from the rubble of the late 60’s to give birth to the greatest era of rock n roll we will ever see, to present day with Damian North and Behn Payten: two ships that could have so easily passed in the night, but didn’t, because it was mid-January and daylight savings was in full effect. Which is a great result for us at No. 7 Healesville.
We are delighted to announce that Damian is taking up the mantle of Young Winemakers Program Coordinator; mentoring, instructing, building confidence, moving hearts, generally being a good guy. Behn will assume the role of No 7 Winemaker, overseeing creation, invention and innovation while maintaining a firm grip on the overall proceedings alongside Damian. Together they’re No. 7’s dynamic duo, Healesville’s Siegfried and Roy if you will, and will no doubt be incredible mentors, advisers and friends to all who come through the doors.

Behn Payten is something of a legend in the Yarra Valley, coming from a wine family (Behn’s dad Pete Payten set up some of the most respected vineyards in the region) Behn’s vigneron voyage began at the tender age of five, driving the family tractor through the vineyard helping his old man. As the years went by Behn continued to work among the rolling hills of the Yarra Valley: “When the money ran out after travelling, working a vintage always seemed the best way to get cashed up so I could get the hell out of Healesville again…though that plan never really worked as I now own a house and a business in Healesville (laughs)”.
In 2008 Behn Payten and good friend Troy Jones released their inaugural vintage under their label Payten & Jones, and in late 2017 the Payten & Jones cellar door opened in Healesville. Throughout that near-decade Behn has been heavily involved in all things Yarra Valley, from being a key player in the Four Pillars team to head cider maker at Napoleone Brewery and Cider house – pretty incredible for a bloke who, as a kid, couldn’t wait to get out of Healesville!

Bright, enthusiastic, passionate and fun, Gabrielle Sych has officially joined the No.7 team as our Venue Manager. Watch this space for what is sure to be a riveting, revealing and uplifting bio on the one and only Gabs!
Trevor Schneider’s food speaks for itself, but we’re still going to take some time to speak for him! Having grown up in Brisbane, Trevor spent the early days of his career cooking up north before realising, (as most ambitious young creatives do), that perhaps there was more to this sun-kissed land.
In early 2008 Trevor decided that Melbourne was worth having a look at, and took up the mantel of sous-chef at Fitzroy’s revered Guernica Restaurant, where he stayed for two-years before hitting the road again. Over the next eight years Trevor enjoyed the best Australia has to offer, working in Sydney for a few years at Bills Darlinghurst and Eminem Modern Turkish in Perth for two.
In 2009 Trevor returned to Fitzroy, before a chance encounter at Healesville’s Giant Steps introduced him to Maddy, his now fiancé and mother to their three boys Fin, Scout and Marlon. Trevor took up the job of head-chef at Giant Steps, where he remained for three years helping to put Giant Steps on the culinary map. In early 2016 he moved up the street to Herd, where he fused years of Turkish, Spanish and culinary influences.
